Sunday Slow Cooker Love!

Spiced Glazed Pork Roast with Apples



cut up apples and line the bottom of the crock pot with them (4 apples or so)
rub the pork roast (and ribs if you want to be fancy like I did) with salt and pepper. place on top of the apples.
dice a red onion and a jalepeno or two. dump on top of pork.
shred 1tsp fresh ginger on top.
sprinkle a little more salt and pepper on top.
mix 1/3 cup maple syrup, 1/3 cup molasses, 1/2 cup apple cider, 1tbs dijon mustard then pour over top.
sprinkle with a little cinnamon, cloves, and nutmeg.
cook on low - don't try to rush it with high settings. 6 hours should be about right.

the apples break down and provide enough liquid to cook everything.

if i had to do over, i would bake potatoes (or boil them) and serve them with the roast. if you can fit them in the pot with everything, do it half way through so they dont break down too much.
when the meat is resting, boil down a bunch of the liquid to thicken it up for a glaze. 
serve with the broken down apple/onion/jalapeno mush on top. soooo good!

yikes... just did the calories on this... 1125 per serving.
we'll just save this for special occasions :)
